Ingredients
  

Main Ingredients

  • 2 cups unsweetened almond milk
  • 1/2 cup chia seeds
  • 1/4 cup erythritol or monk fruit sweetener
  • 1 tsp vanilla extract
  • 1 cup fresh strawberries sliced
  • 4 oz cream cheese softened
  • 2 tbsp coconut oil melted
  • salt pinch

Instructions
 

  • Combine chia seeds with unsweetened almond milk in a medium bowl. Stir and let sit for 10–15 minutes.
  • Blend softened cream cheese, erythritol, vanilla extract, coconut oil, and salt until smooth.
  • Add cream mixture to chia mixture, stir until combined, distribute into serving glasses, and chill for 4 hours.
  • Top with sliced strawberries before serving.

Notes

Store any leftovers in an airtight container in the refrigerator for up to five days. Add fresh strawberries only when ready to serve to keep them fresh.
