Prepare the chicken breasts by lightly pounding them to an even thickness. In a small bowl, combine freshly squeezed lemon juice, olive oil, minced garlic, chopped red chilies, salt, and pepper. Mix well, then coat the chicken thoroughly in the marinade. Cover and refrigerate for at least 30 minutes—the longer, the better.
While your chicken is soaking in flavors, it's time to heat up your grill. If you're using a charcoal grill, light it and allow it to reach a medium-high heat. For a gas grill, turn it to medium-high and let it heat up for about 10 minutes.
Place the marinated chicken on the hot grill. Grill for about 5-7 minutes on each side, depending on the thickness, until the chicken is golden brown and cooked through completely. An internal temperature of 165°F is ideal.
Once perfectly grilled, remove the chicken from the grill and let it rest for a few minutes.
Notes
Store leftover grilled chicken in an airtight container in the refrigerator for up to 3 days, or freeze for up to 2 months for longer preservation.
