Steps
Rub both sides of the beef generously with olive oil, salt, and pepper. For best results, marinate for at least one hour.
In a mixing bowl, combine softened butter with minced garlic, parsley, rosemary, thyme, lemon juice, and lemon zest.
Place your cast iron skillet over medium-high heat until water sizzles when sprinkled.
Place the London Broil onto the hot skillet. Cook for about 5–6 minutes on each side, or until desired doneness.
Transfer the meat to a cutting board. Rest for five minutes, then slice against the grain.
Spread herb butter over each serving of London Broil or top with it.
