Steps

  • Rub both sides of the beef generously with olive oil, salt, and pepper. For best results, marinate for at least one hour.
  • In a mixing bowl, combine softened butter with minced garlic, parsley, rosemary, thyme, lemon juice, and lemon zest.
  • Place your cast iron skillet over medium-high heat until water sizzles when sprinkled.
  • Place the London Broil onto the hot skillet. Cook for about 5–6 minutes on each side, or until desired doneness.
  • Transfer the meat to a cutting board. Rest for five minutes, then slice against the grain.
  • Spread herb butter over each serving of London Broil or top with it.
