Dry Ingredients

  • 1/2 cup almond flour
  • 1/4 cup vanilla protein powder Choose your preferred type.
  • 2 tablespoons matcha powder
  • a pinch sea salt

Wet Ingredients

  • 1/4 cup white chocolate chips Melted with almond butter.
  • 1/4 cup almond butter Can substitute with other nut butters.
  • 2 tablespoons honey Can be replaced with agave syrup for vegan option.
  • 1/2 teaspoon vanilla extract

Instructions
 

Preparation

  • In a medium-sized mixing bowl, combine the almond flour, vanilla protein powder, matcha powder, and a pinch of sea salt. Whisk well.
  • In a microwave-safe bowl, mix the white chocolate chips and almond butter. Microwave in 15-second intervals until smooth, stirring in between.
  • Add the melted chocolate-almond butter mixture to the dry ingredients. Mix in honey and vanilla extract. Fold until thoroughly combined.
  • Shape the mixture into small balls, about 1-inch in diameter, placing them on a baking sheet lined with parchment paper.
  • Refrigerate the baking sheet for at least 30 minutes to firm up the truffles.

Notes

If the dough is too dry, add a tablespoon of milk. For extra sweetness, drizzle melted white chocolate on top before chilling. These truffles can be customized with different nut butters or protein powders.
