Steps
Preheat your oven to 425°F (220°C). Pat the beef tenderloin dry and season with salt and pepper.
Heat olive oil in a skillet over medium-high heat. Sear the tenderloin on all sides for 2-3 minutes each.
Melt butter, add garlic and rosemary. Stir frequently until fragrant. Stir in Dijon mustard.
Brush the garlic rosemary butter over the tenderloin. Place in oven, roasting till internal temp is 135°F (57°C).
Remove from the oven, tent with foil and let rest for 15 minutes. Slice and serve.
Notes
Leftovers can be refrigerated for up to three days. Reheat gently or enjoy cold in sandwiches.
