Steps
Prepare the ingredients by dicing the potatoes, chopping the onion, and mincing the garlic.
In a large skillet over medium heat, add the olive oil and sauté the onion and garlic until fragrant and translucent.
Push the onions aside and add the ground beef. Cook until browned, breaking it apart with a spatula.
Add the diced potatoes to the pan, sprinkle in salt, pepper, smoked paprika, and oregano. Stir to combine.
Pour in the beef broth, reduce the heat and cover the pan. Simmer until potatoes are tender, about 15-20 minutes.
