Ingredients
  

  • - 1 lb cubed chicken breast seasoned with Cajun seasoning
  • - 1 can fire roasted tomatoes
  • - 8 oz short pasta penne, rigatoni, or fusilli
  • - 2 cups chicken broth
  • - 4 oz cream cheese
  • - 1 medium onion sliced
  • - 2 tbsp Cajun seasoning
  • - 2 tbsp olive oil
  • - Salt and pepper to taste

Instructions
 

  • Season the cubed chicken with Cajun seasoning in a glass bowl.
  • Sauté the seasoned chicken in olive oil in a large skillet until browned.
  • Add sliced onions to the skillet and sauté until soft and translucent.
  • Pour in fire roasted tomatoes and chicken broth, stirring to deglaze the pan.
  • Add pasta and stir to combine, ensuring it is well coated.
  • Simmer until the pasta is tender and has absorbed the broth.
  • Stir in cream cheese until melted and the sauce becomes creamy.
  • Adjust seasoning with salt and pepper as needed.
