Equipment

  • Large, deep skillet or Dutch oven
  • Cutting board and sharp knife
  • Measuring cups and spoons
  • Citrus zester/grater

Ingredients

  • 1 lb large shrimp peeled and deveined
  • 1.5 cups long-grain or jasmine rice
  • 2 large lemons zest and juice
  • 4-5 garlic cloves minced
  • 3 cups chicken or seafood broth
  • 3 tbsp extra virgin olive oil
  • 1 medium onion finely chopped
  • Fresh parsley chopped (for garnish)
  • Salt and pepper to taste
  • Optional: A pinch of red pepper flakes a splash of white wine

Instructions

  • Prepare the Base:
  • Heat the olive oil in a large, deep skillet or Dutch oven over medium heat. Add the chopped onion and sauté until translucent (about 3-4 minutes). Then add the minced garlic and red pepper flakes (if using) and cook for another 1-2 minutes until fragrant.
  • Add the Rice:
  • Stir in the rice, ensuring that each grain is coated with the oil and mixed with the onions and garlic.
  • Incorporate the Liquid:
  • Pour in the broth along with the juice of two lemons. Add the lemon zest and stir well. Bring the mixture to a simmer and let it cook uncovered for about 15-20 minutes, stirring occasionally, until the rice starts to absorb the liquid.
  • Cook the Shrimp:
  • Arrange the shrimp evenly on top of the simmering rice. Cover the pot and cook for an additional 5-7 minutes, or until the shrimp turn pink and curl.
  • Final Touches:
  • Once the shrimp are cooked and the rice is tender with most of the liquid absorbed, remove the pot from the heat. Gently stir to combine all the flavors. Taste and adjust the seasoning with salt and pepper as needed.
  • Garnish and Serve:
  • Sprinkle fresh chopped parsley over the dish. Serve immediately with extra lemon wedges on the side if desired.

Notes

For extra flavor, deglaze the pan with a splash of white wine before adding the broth.
If you prefer using brown rice, increase both the broth and the cooking time accordingly.
