Start by seasoning the beef tips with salt and pepper. Heat the olive oil in a sauté pan over medium-high heat. When the oil is hot, add the beef tips and cook until they are browned on all sides.
In the same pan, reduce the heat to medium and add the chopped onion and minced garlic. Sauté until the onion is translucent and the garlic is fragrant, about 2–3 minutes.
In a small bowl, whisk together the beef broth, Worcestershire sauce, thyme, and flour until smooth. Pour this mixture into the pan with the sautéed onions and garlic. Bring it to a simmer while stirring.
Preheat your oven to 350°F (175°C). Transfer the beef tips to a baking dish, then pour the onion and sauce mixture over the top. Cover with aluminum foil and bake in the preheated oven for about 45 minutes.
Remove from the oven, let it rest for a few minutes, then serve the beef tips warm. Garnish with fresh herbs if desired.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove and add a splash of broth if needed.
