Steps
Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners.
In a mixing bowl, combine flour, baking soda, baking powder, pumpkin pie spice, and salt. Set aside.
In a large bowl, whisk together eggs, sugar, oil, and pumpkin puree until smooth.
Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
Fold in nuts and chocolate chips or raisins, if desired.
Spoon the batter into the muffin liners, filling each about 2/3 full.
Bake for 18-22 minutes or until a toothpick inserted into the center comes out clean.
