Steps

  • Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners.
  • In a mixing bowl, combine flour, baking soda, baking powder, pumpkin pie spice, and salt. Set aside.
  • In a large bowl, whisk together eggs, sugar, oil, and pumpkin puree until smooth.
  • Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  • Fold in nuts and chocolate chips or raisins, if desired.
  • Spoon the batter into the muffin liners, filling each about 2/3 full.
  • Bake for 18-22 minutes or until a toothpick inserted into the center comes out clean.
