Steps
Heat the vegetable oil in a large pot over medium-high heat. Sear the beef cubes in batches until browned on all sides. Remove and set aside.
Add the onion and garlic to the same pot. Sauté until translucent.
Stir in the tomato paste, then pour in the beef broth and add thyme. Bring to a boil, then simmer.
Return beef to the pot and add carrots, potatoes, and celery. Simmer for about 1 hour.
Add peas and adjust seasoning. Serve hot.
Notes
Store in an airtight container in the fridge for up to 4 days. Reheat on the stove or microwave before serving.
