In a large bowl, combine the sliced beef with 1 tablespoon of soy sauce and 1 tablespoon of corn starch. Let it marinate for at least 15 minutes.
Blanch broccoli florets in boiling water for two minutes, then plunge into ice water. Drain and set aside.
Heat oil in a wok over medium-high heat. Add beef slices; sear for 2-3 minutes per side. Remove and set aside.
Add ginger and garlic to the wok; sauté for 30 seconds until fragrant.
Return beef and broccoli to the wok. Add beef broth, soy sauce, and oyster sauce. Stir to combine.
Mix corn starch with water to make a slurry; add to the wok. Cook until sauce thickens. Serve warm.
Notes
For best results, consume within three days of preparation. Refrigerate leftovers in an airtight container.
