Steps

  • Prepare all your ingredients: slice the onion, bell peppers, and mince the garlic. Ensure the chicken is at room temperature.
  • Heat olive oil in a skillet over medium heat. Add onion and bell peppers, sauté for 5 minutes until they soften.
  • Move vegetables to the skillet's side. Add chicken breasts, season with smoked paprika, cumin, salt, and pepper. Brown each side for 5-6 minutes.
  • Stir in garlic, add chicken broth and soy sauce, and bring to a simmer. Cover and reduce heat to low, simmering for 15 minutes.
  • Garnish with fresh parsley and serve hot with choice of side dishes.
