  • 2 tablespoons olive oil
  • 4 boneless chicken breasts
  • Salt and pepper to taste
  • 2 cups cherry tomatoes halved
  • 1/2 cup fresh basil leaves
  • 1 cup mozzarella cheese shredded
  • 2 cloves garlic minced
  • 1 teaspoon Italian seasoning

Instructions
 

  • Heat the olive oil in a large skillet over medium-high heat. Season the chicken breasts with salt and pepper on both sides. Place the chicken in the skillet and cook for about 5-7 minutes on each side, until golden brown and cooked through. Remove from the skillet and set aside.
  • Add the garlic to the skillet, and sauté for about 30 seconds until fragrant. Be careful not to burn the garlic, as it can become bitter.
  • Add the cherry tomatoes to the skillet, stirring occasionally, and cook for about 3-4 minutes until they start to soften. Add the Italian seasoning and mix well.
  • Return the cooked chicken to the skillet. Top each piece of chicken with shredded mozzarella. Cover the skillet with a lid and reduce the heat to low. Allow the cheese to melt over the chicken for about 2-3 minutes.
  • Sprinkle fresh basil leaves over the melted mozzarella. Let the flavors meld for a minute before serving.

For extended freshness, store leftovers in an airtight container for up to three days and reheat gently.
