Steps
Wash, peel, and cut the vegetables. Slice carrots and celery, cube potatoes, and chop onion finely.
Sear beef cubes in a skillet over medium-high heat until browned on all sides.
Transfer beef and vegetables into the slow cooker. Add minced garlic, beef broth, tomato paste, thyme, rosemary, salt, and pepper.
Set the slow cooker to low and cook for 7-8 hours, or high for 4 hours.
Taste and adjust seasoning if necessary. For a thicker consistency, mash a few potatoes in the pot.
Serve hot with crusty bread and garnish with fresh parsley if desired.
Notes
Leftovers can be refrigerated for up to 3 days or frozen for up to 2 months. Reheat slowly on the stove for best results.
