Steps

  • Wash, peel, and cut the vegetables. Slice carrots and celery, cube potatoes, and chop onion finely.
  • Sear beef cubes in a skillet over medium-high heat until browned on all sides.
  • Transfer beef and vegetables into the slow cooker. Add minced garlic, beef broth, tomato paste, thyme, rosemary, salt, and pepper.
  • Set the slow cooker to low and cook for 7-8 hours, or high for 4 hours.
  • Taste and adjust seasoning if necessary. For a thicker consistency, mash a few potatoes in the pot.
  • Serve hot with crusty bread and garnish with fresh parsley if desired.

Notes

Leftovers can be refrigerated for up to 3 days or frozen for up to 2 months. Reheat slowly on the stove for best results.
