Ingredients
  

Main Ingredients

  • 2 lbs beef chuck cut into cubes
  • 1 cup sour cream
  • 1 cup beef broth
  • 1 onion chopped
  • 3 cloves garlic minced
  • 2 tbsp olive oil
  • 1 tbsp Dijon mustard
  • 2 tbsp butter
  • salt and pepper to taste
  • 1 cup mushrooms sliced
  • 1 tsp xanthan gum

Instructions
 

  • Heat olive oil in a skillet and sear the beef cubes on all sides. Transfer to the slow cooker.
  • In the skillet, melt butter and sauté onions and garlic until translucent, then add to the slow cooker.
  • Sauté mushrooms until light brown in the same skillet, and add to the slow cooker.
  • Mix beef broth, sour cream, mustard, salt, and pepper in a bowl, then pour over ingredients in the slow cooker.
  • Cook on low for 6-8 hours, stirring occasionally.
  • Thicken with xanthan gum dissolved in cold water if needed, 30 minutes before serving.

Notes

Leftovers can be stored in the refrigerator for up to 4 days or frozen for up to 3 months. Reheat with additional cream or broth if needed.
