sour cream

mushrooms

xanthan gum
Instructions
Heat olive oil in a skillet and sear the beef cubes on all sides. Transfer to the slow cooker.
In the skillet, melt butter and sauté onions and garlic until translucent, then add to the slow cooker.
Sauté mushrooms until light brown in the same skillet, and add to the slow cooker.
Mix beef broth, sour cream, mustard, salt, and pepper in a bowl, then pour over ingredients in the slow cooker.
Cook on low for 6-8 hours, stirring occasionally.
Thicken with xanthan gum dissolved in cold water if needed, 30 minutes before serving.
Notes
Leftovers can be stored in the refrigerator for up to 4 days or frozen for up to 3 months. Reheat with additional cream or broth if needed.
