  • 1 tbsp olive oil
  • 6 chicken thighs boneless, skinless
  • 1 onion chopped
  • 3 cloves garlic minced
  • 2 bell peppers sliced
  • 14 oz crushed tomatoes canned
  • 1 cup chicken broth low sodium
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 0.5 tsp dried thyme
  • salt and pepper to taste
  • fresh parsley for garnish

Instructions
 

  • Heat olive oil in a skillet over medium heat, add onions and garlic, cooking until onions are translucent.
  • Add chicken thighs to the skillet and brown on each side for 3–4 minutes.
  • Transfer chicken, onions, garlic, bell peppers, tomatoes, chicken broth, and seasonings to the slow cooker.
  • Set the slow cooker on low for 6–7 hours or high for 3–4 hours.
  • Garnish with fresh parsley and serve hot.
