Steps

  • Prepare all the ingredients by slicing chicken, mushrooms, and ginger, and bruising lemongrass.
  • Heat oil in a large pot, add ginger and lemongrass, and sauté until fragrant.
  • Add sliced chicken to the pot and cook until brown.
  • Add mushrooms, chicken broth, and bring to a gentle simmer for 10 minutes.
  • Slowly stir in the coconut milk and let it simmer for 5 minutes.
  • Add fish sauce, lime juice, sugar, and season with salt and pepper.
